I'm doing a GIVEAWAY!
If you have been reading this for a while, or just starting, here is the scoop - I don't cook. Hardly. It would be nice if I did it once in a while, and I think my family would appreciate it as well.
So here's the deal, leave a super easy recipe in the comments on this post.  It's that simple. Maybe all the lurkers will come out of hiding for this! I'll pick a winner sometime soon. Probably early next week, just in time for Christmas!

Oh yes, the giveaway item. I have tried to scan in it but it's not working. I have tried to look it up on line but haven't been able to find it anywhere. So you will just have to go with an explanation.
It's a brand new cd! With artists such as Sara Bareilles , Gomez, Rachael Yamagata, The Weepies, and of course Joshua Radin. I really don't know what could be better!

Okay here is my super easy recipe. It is a simple version of Cafe Rio Pork...
Take a pork roast.
Put it in the crock pot.
Pour on a jar of Salsa.
Sprinkle on 1 1/2 c. Brown Sugar
Cook all day on low
Shred and serve on tortillas, with all of the fixings!

I know that it sounds gross-it's really not-it's super yummy! I made it when Kal and I were dating and he said that was what made him fall in love with me!!

chicken stuff in a bowl
canned chicken-drained. Or you can use fresh-just boil and shred. Costco's canned chicken is the bomb!
cream of chicken soup
green chilis-diced
sour cream-don't use fat free or low fat-yucky!! Use full fat daisy.
garlic/onion powder and salt and pepper. You could throw in some pourltry seasoning if you want.
Just taste it and make sure it tastes good.
9x13 pan-sprayed
layer doritos-chicken mix-cheese-later again and again.
Bake in the oven at 350 until light brown on edges-heated through.
I know that it sounds funky, but it is super yummy and super easy-plus it's cheap. Try it-you'll like it. Every time I take it to someone=they always ask for the recipe!!

This is so simple I can do it. I make it vegetarian but you can add ground beef to the sauce if you want.:
Baked Ziti
8oz dry ziti pasta
1 jar 3 cheese prego spaghetti sauce
2 c mozzarella cheese
1 c Parmesan cheese
15 oz. ricotta cheese
1 egg
2 tsp dried parsley
1 tsp dried basil
1/2 tsp pepper
olive oil

Boil noodles, drain and coat with olive oil. In a separate dish mix ricotta cheese, egg, parsley and pepper. In a casserole dish layer sauce, noodles, ricotta cheese mixture then the other cheeses. Continue the layering process and top off with leftover sauce and mozzarella and parmesan cheese. Cook at 350 for 25-30 min.

Chicken Tortilla Soup
4 C. Chicken Broth
1 Can Refried Beans
1 Can Black Beans (drained)
1 Frozen bag of Corn
1 Large can diced Tomoates
1 Can Rotel Tomoates
Half pkg of Taco Seasoning (or however much you want)
1 PKG of grilled chicken strips - diced

Simmer of 30 mintues.

I think I have given you this one a few times!
