chicken tortilla soup

Here's a super easy recipe that Emilee passed onto me - thought I should pass it onto you!
All you need is a big pot and a can opener (and the food of course) - can't get much easier than that!

4 cups chicken broth
1 large can diced tomatoes
1 can rotel tomatoes
1 can black beans
1 can refried beans
1 bag frozen corn
1 package pre cooked chicken - diced
1 package taco seasoning

Add everything together including the juices and let simmer about 45 minutes.
When ready to serve, top with tortilla chips and cheese.

Easy and good!

Emilee has also informed me that for leftovers, you can drain some of the juices and make them as a quesadilla filling.

ok-we make this. A quick thought on the best way to freeze left over soup. Spray muffin tins really good, spoon extra soup into tins-flash freeze(put in freezer for a couple of hours) put in freezer ziploc-voila-mini individual cups of soup. works like a dream. No, i have not got your email, guess i should check huh? Keep the yummy recipes coming-only next time, one i haven't made before. :) ha ha

Good Idea about the freezing...I just put it in a container and it takes forever to unthaw. And of course you know the recipe Tausha...it's a WW recipe!
